Which came first, the salad or the sandwich? (Wait, wrong punchline… anyhoo…)
I love me some chicken salad, (and the best possible way to eat it is in a sandwich), so there you go.
This is perhaps one of the easiest recipes I’ve ever created, but don’t be fooled by its simplicity.
This sandwich is loaded with yummy and distinct flavors.
And one of these gigantic sandwiches will keep you satisfied for a long, long time.
How to make it
You will need the following equipment:
- Large mixing bowl
- Chef’s knife
- Cutting board
- Measuring cups
- Measuring spoons
- Wooden spoon
And the following ingredients:
- 1 12 oz can chicken breast
- 1 green apple
- 3 green onions
- 1/2 cup cashews
- 1/2 cup dried cranberries
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 brioche buns
It dices, it slices, it chops
It’s you… you dice, and slice, and chop. (But it’s all worth it in the end…)
Dice the apple, slice the green onions, and chop the cashews, and dump them all in the mixing bowl.
Add the chicken, cranberries, mayonnaise, salt, and pepper, and mix until everything is well combined.
That’s it. Now scoop four generous servings onto the brioche buns, and serve.
I told you; this recipe is easy.
Why I prefer this recipe
There are probably as many chicken salad recipes as there are chickens, and I like an awful lot of them.
But what I love about this recipe is that it’s so easy, and yet all the ingredients bring their own flavor to the sandwich, so it’s not bland and boring.
The green apple gives it both sweetness and a little bit of tart, the cranberries add another layer of tartness, the cashews add salt (and crunch!), and the green onions add, well, a bit of an onion flavor…
(Sorry but really, how else do you describe the flavor of green onions?)
And even though 1/2 cup of mayonnaise can seem like a lot, in this recipe it’s actually just enough to keep the salad from being dry – and believe it or not it does also bring its own flavor to the mix.
Heck, even the brioche bun has its own flavor!
Anyway, this is a great recipe for those times when you’re really rushed and you just want a good, yummy comfort food, to let you just slow down and enjoy life for ten or fifteen minutes…

Classic Chicken Salad Sandwich

Ingredients
- 1 12 oz can chicken breast
- 1 green apple diced
- 3 green onions sliced
- 1/2 cup cashews coarse chopped
- 1/2 cup dried cranberries
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 brioche buns or other sandwich rolls
Instructions
- Combine all ingredients except buns in a large mixing bowl, stir until well combined.
- Scoop equal portions onto each of four buns and serve immediately.
